Bougatsa Ice Cream a Hit in Thessaloniki

A Thessaloniki ice cream shop has made the beloved Greek dessert bougatsa the coolest thing in the city thanks to their newest concoction, bougatsa ice cream. 

The idea, according to shop owner Stelios Ribas, came about by chance when he was mulling over what to do with a batch of leftover bougatsa cream. Even though it was mid-December, “the experiment just happened to succeed,” said Ribas in an interview with the radio station of the Athens-Macedonian News Agency.  

His bougatsa ice cream has now become a hit with locals and tourists alike. According to Ribas, it took some tweaking, but the final product closely resembles the traditional bougatsa in taste and texture. Served as glazed bars and sprinkled with powdered sugar and cinnamon, the ice cream successfully captures the bougatsa essence. 

Ribas is now considering placing traditional bougatsas next to the ice cream in his shop, ensuring all visitors can appreciate both versions of the iconic Greek custard pie.
